Wasabi Salad

Surprise your taste buds with this Asian-influenced salad. The cool cucumber flavour balances out the spicy wasabi heat in this delicious but simple gourmet treat.

Ingredients

Seedless Cucumbers
  • 1 lb. of Ontario greenhouse seedless cucumbers, sliced
  • ½ tsp. (3 g) wasabi powder
  • ½ tsp. (3 ml) water
  • 2 tbsp. (30 ml) rice vinegar
  • 1 tbsp. (15 g) sugar
  • ¼ tsp. (2 ml) soy sauce
  • 1 tsp. (15 g) salt

Instructions

  1. Slice the cucumbers and add salt.
  2. Let stand for 30 minutes and then drain.
  3. With cold water, rinse salt off cucumbers and pat dry.
  4. Mix wasabi powder with water.
  5. Add vinegar, sugar and soy sauce. Mix until sugar dissolves.
  6. Add cucumbers and toss.
