Bruschetta

Our globally inspired Indian Bruschetta is a wonderful way to capture the flavour of ripe tomatoes as a popular appetizer.

Ingredients

Grape Tomatoes

Dressing Ingredients

  • 1 tbsp. (15 mL) jalapeño
  • 1 tbsp. (15 mL) fresh ginger, minced
  • 1 ½ tbsp. (22.5 mL) fresh lime juice
  • 1 ½ tbsp. (22.5 mL) extra virgin olive oil
  • ⅛ tsp. (0.6 mL) cayenne pepper
  • ½ tsp. (2.5 mL) sea salt
  • 1 tsp. (5 mL) granulated sugar

Bruschetta Mix Ingredients

  • 2 lbs., 3 oz. (1 kg) Ontario Greenhouse Grape Tomatoes, various colours
  • ⅓ cup (80 mL) fresh cilantro
  • 2 tbsp. (30 mL) fresh mint
  • 1 ½ tbsp. (22 mL) coriander seeds
  • 1 ½ tbsp. (22 mL) cumin seeds

Instructions

  1. Toast coriander and cumin seeds in a dry pan. When cool, grind to a fine powder.
  2. Combine ginger, jalapeño, lime juice, olive oil, cayenne, salt and sugar, set aside.
  3. Cut tomatoes into bite-sized pieces and set aside. Chop cilantro and mint.
  4. Gently combine tomatoes with dressing, cilantro, mint and ground spice mixture.
  5. Serve bruschetta with toasted flatbread.
