Burrata is a fresh Italian style buffalo milk cheese that is prized for its soft creamy interior. Locally producedin Ontario, this is a cheese you will fall in love with!
Bib Lettuce : Red, green washed, leaves separated
2 pieces : Burrata cheese drained, cut in half
8 pieces : Sourdough Crisps
4 pieces : Heirloom Tomatoes wedged
1 oz (30 gm) : Hazelnuts toasted, skins removed and chopped
1 : Shallot small, peeled and minced
1 tbsp (15 ml): Dijon Mustard grainy
2 tbsp (30 ml): Sherry Vinegar
1/2 cup (125 ml) :Extra Virgin Olive Oil
Kosher Salt & Freshly Ground Pepper
Preheat oven to 250°F. Toss tomatoes with olive oil and seasoning. Place on parchment lined tray and bake until semi-dried but still moist to the touch. Allow to cool and set aside.
Toss the lettuce leaves with a small quantity of dressing. Arrange on plate, add cheese, oven dried tomatoes and addition heirloom tomatoes. Garnish with sourdough crisps and drizzle with remaining dressing.
