Roasted Pepper & Cucumber Salad

Serves 4 as an appetizer

Ingredients

Mini Seedless Cucumbers Red Bell Pepper
1 Ontario greenhouse red pepper

 

1 tsp canola oil

 

3 Ontario greenhouse mini cucumbers

 

¼ cup mascarpone cheese

 

1 tbsp lemon juice

 

Pinch Salt and pepper

 

Garnish: Balsamic glaze and microgreens

Instructions

Cut the pepper into halves. Remove the seeds and the membranes. Place pepper, cut side down, on greased baking sheet and broil on low about 15cm from the element until blackened, about 10 minutes. Place in bowl and cover with plastic wrap or place in a plastic food bag. Cool enough to handle. Remove skin and cut into 12 strips. This step can be done the day in advance.

 

Bring mascarpone to room temperature and blend until smooth with lemon juice, salt and pepper.

 

Cut cucumbers into julienne strips using a knife or julienne peeler.

 

Assemble on 4 plates evenly. Start with the mascarpone cheese mixture, top with peppers and cucumber. Lightly drizzle with balsamic glaze and garnish with microgreens.
