Artic char is a fresh water fish that lends itself to wild rice when creatively combined with flavors of the tomato vinaigrette.
1 lb (454 gm) : Grape Tomatoes
1 : Shallot peeled, thinly sliced
2 tbsp (30 ml) : Dijon Mustard
5 tbsp (75 ml) : Red Wine Vinegar
1 tbsp (15 ml) : Honey
1 cup (250 ml) : Extra Virgin Olive Oil
2 tbsp (30 ml) : Flat Leaf Parsley chopped
10 : Basil Leaves torn
Kosher salt & freshly ground pepper
Half the grape tomatoes and arrange on a large baking tray. Top with slices of shallot and broil on high until charred. Remove from the broiler and let cool.
In a blender combine the tomatoes, Dijon, vinegar and honey. Once the mixture is smooth slowly add the olive oil. Season according to taste.
Remove the dressing from the blender and add to an airtight container. Add the chopped herbs and stir to combine.
